Rhubarb is a summer staple in Minnesota, but for as long as I’ve lived there’s only been one recipe I’ve truly enjoyed the tart “fruit” in; my Grandma Bev’s rhubarb dessert (you can find the recipe here). That is, until I discovered rhubarb liqueur.
It’s a really simple concept. Vodka, sugar, rhubarb, more sugar. Add it to lemonade for a double dose of summer sipping or favorite cocktail (see a few of mine below)!
3 cups rhubarb, chopped
2 cups Everclear
2 cups plus 3 T granulated sugar
2 cups water
Step 1 – Add rhubarb, Everclear, and 3 T of sugar to an air-tight container (I use a quart size Mason jar). Put the jar in a cool dark place. Let it sit for another two weeks, stirring occasionally.
Step 2 – When the two weeks are up, strain the mixture using a fine mesh strainer or cheesecloth.
Step 3 – Add two cups of water and two cups of sugar to a medium sauce pan and boil. When sugar has dissolved remove mixture from heat and let cool.
Step 4 – Once cool, add the sugar syrup to the rhubarb mixture, stir and enjoy straight up or in mixed drinks!
I like to mix it in to my lemonade (add to taste) or use this recipe for a little extra kick!
Rhubarb Vodka Lemonade
3 oz vodka
2 oz rhubarb liqueur
4 oz fresh lemonade
Add a slice of lemon for garnish and enjoy!
